Weekly Menu Planning 1/28

Monday always comes so quickly, doesn’t it? I had a wonderful weekend lazing around with the hubs. We had dinner the kiddo and my mama Saturday night. Josh is always so happy when he’s at school and is learning and engaged. It makes my heart smile! Here’s what’s on the menu this week.

Monday: Grilled chicken sandwiches, gluten free pasta salad and veggie

Tuesday: Burgers and oven roasted potatoes with salad

Wednesday: Baked Southwest Chicken with rice. I found this recipe on Pinterest and it looks great! Recipe here.

Thursday: leftovers or something easy

Friday: out.
