Weekly Menu 9/16

IMG_1351

We are back from an amazing weekend away and I have to say, I was not ready to come back to work!  We spent the weekend in Cape May, NJ with family, walking around town and bike riding all over the place.  We ate really yummy food (Lobster TWICE!) and I was lucky to not have gained any weight.  We went on a boat ride and saw dolphins swimming right next to us and got to hang out with some awesome new friends and cute kids.  On the home front, Josh made an acapella group and I am SO EXCITED!!!!!  I love seeing my boy on stage and we will totally get to see him in shows and competitions.  This mama is happy, happy, happy!!!

So here’s what Aaron and I are eating this week.  We meal planned on the ride home yesterday and got our groceries before we even went home.

M: Pierogies and sauteed squash, zucchini and mushrooms for meatless Monday.

T:  Turkey Tacos! I love taco tuesdays.

W: Shepherds Pie.  I haven’t made it in a while and it’s always such a yummy dinner.

T: New York Strip steaks.  We haven’t had steak in a while and my low iron is begging for it!

F: Leftovers.  We’ll have plenty after this week’s cooking.  I’m hoping there will be Shepherds pie left!  I may bring it for lunches though!

S:  Wedding!  My friend is getting married and I’m so excited to celebrate her and her new hubby!

S: Family dinner

Breakfasts are eggs and turkey sausage and lunches are chicken salad sandwiches.  I’m obsessed with the sandwiches lately.  I’ve never been a big bread or sandwich eater.

What’s on your menu?

What’s up, Wednesday 9/11

It’s hump day! I have one day left of crazy work and then a long weekend to recoup. We’ll be in Cape May, NJ Friday through Sunday with Aaron’s family. Tomorrow night my girlfriends and I are getting together to celebrate 3 of our birthdays from August. I’m excited for some girl time. I’ve already planned my meal, since it’s once of my favorite restaurants. Blt salad with filet. Yum! Not much else is going on in Lori Land. Lol! Enjoy your weekend!

What’s up, Wednesday 7/17

Oh, what a wonderful vacation so far!! We started Sunday in NYC and Hamilton was AMAZING!!! We’ve been at the beach since Monday morning.

  • It’s so hot. Even with the sea breeze. The water feels delightful though!
  • I’ve eaten too much ice cream. Lol.
  • My husband is super hot.
  • It’s nice to be away from the world for a few days and not thinking about work.
  • Our hotel bed is the worst!! Small, hard and scratchy sheets. I miss our nice squishy king bed at home.

So, what’s up with you?

What’s Up, Wednesday?

I haven’t been posting very much! I’m going to start posting whatever is on my mind on Wednesday’s. So, what’s up, Wednesday?

  • I went to Vegas last month for Arbonne’s GTC. I learned so much about the company and products and made tons of new friends. It was an amazing experience and I can’t wait to ramp up my business and return next year!
Two weeks ago today, my darling husband officially adopted Joshua! It was such a special day and we had a kick ass bbq this past weekend for Father’s Day.
Speaking of Father’s, yesterday marked 7 years since I lost mine to cancer. It doesn’t get any easier. I miss him every day.
I’ve been feeling like crap this week. It’s like all my health issues are battling each other for the top. Migraine, hypoglycemia and low heart rate all at once. Just blah.

That’s all for this Wednesday! See you next week!

Vegas, baby!

vegas

This time next week, I’ll be at the airport with my girlfriends waiting to board our flight to Las Vegas!  I’m so excited!  We are going to Vegas for the Arbonne GTC.  I can’t wait to see all of the new products being launched and learning some new share tactics.  What I’m MOST excited about, besides girl time, is seeing RACHEL HOLLIS!!!  I’m totally obsessed with her and cannot WAIT to listen to her live.  I’m totally fan-girling!!

I’ve been to Vegas once before on a girls trip, and I broke my foot the very first day on a walk down the strip.  It’s really hard to get around vegas when you can’t walk!

We’re staying at the Park MGM.  Any suggestion on where to eat or things to do in our free time??  Tell me, tell me, tell me!!

Vacation Blues

Do you get the blues when vacation is over?  I returned to work on Monday, and that also meant the return of my headaches.  Coincidence?  I think not!  I love my job, I really do, but I love vacation more!

Our trip to Jamaica was everything I could have dreamed of and more.  The weather was good, the food was great, the staff was attentive and my time with Aaron was perfect.  Our already strong bond was strengthened even more.  It’s amazing what time away can do for your soul and your marriage!!

I don’t think I could ever stay in another resort brand again.  Secrets St. James in Montego Bay was truly amazing.  We had the greatest view from our amazing suite.

Even before landing, you could see how clear blue the ocean was

We were greeted by staff when we arrived to the resort and taken to our suite.  I wish I had taken actual pics, because it was gorgeous.  I loved the soaking tub and the bed was so comfortable!

We had a nice little surprise waiting for us when we entered the room.  Aaron had told them that we were celebrating our honeymoon, which we were…a year and a half after we wed!

We were also gifted with a romantic in suite breakfast, which was totally yummy!

We woke early every morning, usually by 5:30-6am.  We took a walk every morning to watch the sunrise and then headed to the coffee shop.  This peacock was there to greet us every morning.  We were constantly trying to get good pictures of her!

We lazily laid by the ocean every day and floated around all afternoon.  I enjoyed my daily mimosas.

We would check out the pool scene in the afternoon.  The pool bar bartenders were really funny and livened up the day.  This view from what we called the quiet pool was spectacular!

The food was incredible.  I thought my favorite was the French restaurant, until I tried the Italian food.  Crazy, right?  Those Jamaicans can surely cook a mean steak, too!  Seriously perfect!  We enjoyed our dinners every night and dressing up.

It was truly a magical vacation and I’m already looking forward to our next trip away!  For now, the memories we made and the pictures we took will be at the forefront of my mind.

Jamaica!!

Aaron and I were married in May, 2017 and spent our honeymoon in Johns Hopkins hospital while Aaron underwent surgery to remove a Pancreatic NeurEndocrine Tumor (which was a success!).  After he was healed we tried, unsuccessfully, to have a baby.  It’s much harder at 40 to get pregnant and we explored all options before moving to foster care and adoption.  We spent about 8 months on training and certification and creating a new nursery, before deciding not to proceed.  Aaron’s health is good, but we have to keep it that way.  His spleen was removed during his surgery and he is way more susceptible to illness than before.  Our 18 year old left for college and our 11 year old bulldog had to be helped over the rainbow bridge and our lives were kind of at an impasse.  What else is there to do, but FINALLY plan our honeymoon.  We’ve taken a few trips here and there, to Rehoboth Beach, Ocean City beach, Maryland and a weekend in Philadelphia, but we wanted a REAL honeymoon.

One week from today we will be heading to Secrets St. James Montego Bay!!  We are so excited to be able to rest, unwind and enjoy everything that the resort has to offer.  Snorkeling?  YES!  Stand up paddleboarding?  Please!!  Unlimited food and drinks?  Well, in moderation.  We are working on a healthy future!

Where is your favorite place to vacation?  We’re already looking for our next getaway.  I’m thinking of an East Coast tour of bed and breakfasts.  Doesn’t that sound romantic??
