Happy Sunday! It’s been a busy day so far! I slept in until 7:30am and then hit the ground running. Aaron and I did our grocery shopping early and then made a healthy breakfast for the 3 of us. After breakfast, I meal prepped for the week. Lunches for all 3 of us (Josh is home for another 2 weeks before he heads back to school), including Turkey Sweet Potato Chili. I’ve got yummy gluten and dairy free meatballs ready for dinner tomorrow night. Snacks are all preportioned and ready to go. You know what they say, “Fail to plan, plan to fail.”

W: Chicken Glop. It’s a recipe that Aaron loves from childhood. Chicken breasts baked with cream of mushroom soup, topped with bread crumbs and slices of Mozzarella. It’s supposed to be swiss, but I do NOT like swiss cheese!
Th: Crockpot Beef Roast with carrots, potato and onion. We have to run out for my niece’s concert, so we need a quick dinner. What’s quicker than dinner that’s been slow cooking in the crockpot all day!?
F: Leftover or a soup from the soup swap. We’ll be running to Josh’s concert that night!
Happy Monday! I had a great weekend and am looking forward to a good week! Started off with a country music workout with intervals and arms. Last week was rough. I skipped workouts on Wednesday and Friday, then the weekend. I was feeling very rundown and my body and brain needed the break. Work has been brutally busy, so this week I’m using my workouts to beat the brain and body stress. Here’s what’s on our menu this week:
Monday: Falafel and Tzaziki with side salads.
Tuesday: Turkey Tacos and rice
Wednesday: Salisbury Steaks with Onion Gravy over mashed potatoes.
Thursday: Chicken tenders in the air fryer.
Friday: Grilled chicken salads, most likely on the go. I have a show to get ready for on Saturday!
We are back from an amazing weekend away and I have to say, I was not ready to come back to work! We spent the weekend in Cape May, NJ with family, walking around town and bike riding all over the place. We ate really yummy food (Lobster TWICE!) and I was lucky to not have gained any weight. We went on a boat ride and saw dolphins swimming right next to us and got to hang out with some awesome new friends and cute kids. On the home front, Josh made an acapella group and I am SO EXCITED!!!!! I love seeing my boy on stage and we will totally get to see him in shows and competitions. This mama is happy, happy, happy!!!
So here’s what Aaron and I are eating this week. We meal planned on the ride home yesterday and got our groceries before we even went home.
M: Pierogies and sauteed squash, zucchini and mushrooms for meatless Monday.
T: Turkey Tacos! I love taco tuesdays.
W: Shepherds Pie. I haven’t made it in a while and it’s always such a yummy dinner.
T: New York Strip steaks. We haven’t had steak in a while and my low iron is begging for it!
F: Leftovers. We’ll have plenty after this week’s cooking. I’m hoping there will be Shepherds pie left! I may bring it for lunches though!
S: Wedding! My friend is getting married and I’m so excited to celebrate her and her new hubby!
S: Family dinner
Breakfasts are eggs and turkey sausage and lunches are chicken salad sandwiches. I’m obsessed with the sandwiches lately. I’ve never been a big bread or sandwich eater.
Hello again! This weekend was sooo quick. I was in Washington D.C. for an Arbonne even on Saturday and yesterday we took a nice walk outside, went to brunch, did the grocery shopping and meal prep and I went to my moms and binge watched “Heartland”. Have you seen it??? I love it!!
For breakfasts this week I made sausage and peppers egg bake. It is so good! I’ve been making a version of this every week. The eggs keep me satisfied for quite a bit!
Lunches are turkey and sweet potato chili, that I forgot to take pics of. It’s so good though. Just wish I added a bit more spice! I like a lil heat!
Busy, busy week starts tomorrow. We’re spending today getting prepped and then bbq’ing with the family. Aaron and I both got our workout in this morning. Never miss a Monday! Here’s what we’re having this week:
Spent quite a few hours meal prepping today. I made chicken sausage and veggie egg casserole for breakfasts, fresh veggies and homemade dip for snacks, chicken salad for lunches. I’m trying to keep my protein high. For dinners we have the following planned:
M: out for my bday with the in-laws.
T: carne asada tacos with rice and salad
W: beyond burgers with roasted potatoes and roasted veg
The weekends don’t last. That’s one of my favorite quotes from my uncle, and it’s so true. I can’t believe it’s Monday again already. I spent some time last night meal prepping for the week. I grilled some chicken and made some brown rice pasta for salads, hard boiled some eggs (well, hubs did this) and prepped fruit for snacks. I saved chicken for Aaron’s sandwiches and bagged up his veggie chips.
For dinner this week, this is our lineup:
M: grilled chicken, roasted potatoes and carrots.
T: Tacos
W: chicken and rice with roasted veg
T: Gluten free tenders and sweet potato tots, with veg
F: We’ll be away for the weekend at the beach. Most like Grotto’s pizza, so i’ll stick with salad and a slice of pizza or soup.
