Absence makes the heart grow fonder

Have you ever had a period of days or weeks where everything seems to go wrong?  That explains my last few weeks.  I’ve been having some weird health stuff.  Hypoglycemia and migraines.  The loss of my grandfather.  I’ve been letting these set backs hold me back from reaching my health goals.  I haven’t been meal planning or going to the gym.  It’s hard to go to the gym when your head and face are aching.  I’m hoping to feel better soon, so I can get back to kicking butt!

What do you do when you’ve lost motivation?  I need a pep talk!!

Weekly Menu Planning 2/4

Happy Monday!  We had a super busy weekend, starting out with a couples workout.  Aaron and I never work out at the gym together, but our time aligned on Saturday morning and we hit the Y together.  We followed that up with car shopping for my niece, a BJ’s trip and grocery shopping.  Plus I snuck out for brunch with my girlfriends.  Yesterday I met one of my besties at the gym for a workout and then picked up my boy for the day to watch the super bowl.  Lovely weekend, although I could use a rest day today.  😉

I made a huge pot of taco chili for lunches for the week and our weekly batch of protein muffins for breakfast.  We’ll have veggies and hummus for snacks and brown rice crackers.

Here’s what we are eating for dinners this week:

Monday: Taco’s with refried beans and veggies

Tuesday: Chicken and broccoli alfredo over brown rice pasta with salad

Wednesday: Chicken sandwiches with roasted carrots and potatoes

Thursday: Chicken enchiladas with rice

Friday: Leftovers or dinner out

 

It should be another busy week, since I’ll be back at the gym.  It’s been a rough couple of weeks with vertigo and migraines.  I have an ENT appointment today to hopefully get some answers.  It sucks when you actually WANT to go to the gym and work out and your body has other ideas.  This explains why there hasn’t been a Friday Fitness Review posted in two weeks…did you notice?  LOL!

Weekly Menu Planning 1/28

Monday always comes so quickly, doesn’t it? I had a wonderful weekend lazing around with the hubs. We had dinner the kiddo and my mama Saturday night. Josh is always so happy when he’s at school and is learning and engaged. It makes my heart smile! Here’s what’s on the menu this week.

Monday: Grilled chicken sandwiches, gluten free pasta salad and veggie

Tuesday: Burgers and oven roasted potatoes with salad

Wednesday: Baked Southwest Chicken with rice. I found this recipe on Pinterest and it looks great! Recipe here.

Thursday: leftovers or something easy

Friday: out.

Weekly Menu Planning 1/14

It’s a cold and snowy Monday here in Delaware, and it was so hard to get out of my nice warm bed!  We had a very relaxed weekend, which was definitely needed!  I did get in a double workout on Saturday morning and a trip to the grocery store before the snow started, so I’m feeling pretty good to start the week.

Here is what we’re eating this week, what are YOU eating??

Monday:  Omaha Steak Burgers, Tots and roasted broccoli and cauliflower.  I’ll have over salad, and sweet potato tots.

Tuesday:  Aaron has his work dinner, so Josh and I will have Chipotle!

Wednesday: Breakfast for Dinner!  Veggie Omelets and Turkey Sausage

Thursday: Tilapia filets, rice and roasted carrots

Friday: Steaks, roasted potatoes and sweet potatoes and asparagus

Saturday:  Was supposed to be family dinner out, since Josh is going back to college on Sunday.  However, he is hanging out with friends now and Aaron and I will have a date night.

Sunday:  Tears since my baby will be back at school?  lol!  Some kind of comfort food for sure!

Weekly Meal Planning

Happy Sunday!!  Hope you have enjoyed your weekend, I know that I have.  Yesterday I slept in until 8:30am, went to (healthy) lunch and to the movies with the hubs (Mary Poppins was totally adorable!) and spent an hour and a half wandering around the grocery store with lists from 4 different people!!  Today we’re finally taking down the Christmas tree and watching football.  No plans are the best plans for homebodies!  🙂

I’m currently smelling turkey sweet potato chili with black beans cooking for lunches, and I just finished prepping chicken salad from a rotisserie chicken we had for dinner last night.  I’m totally one of those people who spends $200 at the grocery store and then doesn’t feel like cooking.  Josh is home for another two weeks, so the grocery bill is a bit higher than normal!  Aaron and I are creatures of habit and have mainly the same foods for breakfast and lunch every day.  We both have protein muffins for breakfast and fruit for snack.  He has a lunch meat sandwich and veggie chips for lunch and I have salad or soup/chili.  Here’s our dinner plans for the work week:

Monday:  Chicken Enchiladas and rice

Tuesday: Crockpot roast with carrots and onions, and roasted potatoes

Wednesday:  Fend for yourself night!  Aaron has dinner plans with his BFF and I’ll have leftovers after the gym, since I’m going to the Rachel Hollis documentary with girlfriends!  SO EXCITED!!

Thursday: Shrimp and Scallop Teriyaki with Josh’s homemade fried rice.

Friday:  Out to dinner for Aaron’s dads birthday.  An Italian spot.  Since I don’t eat gluten or dairy, I’ll have the filet and veggies.

Tonight is family dinner at my mom’s and I haven’t planned for next weekend.

Goals or Resolutions?

56788852577__218F4FCB-8016-4BEF-BE1E-779A6AA6A31AA new year gives us so many new chances to do well!  I love that we get a FRESH start to make changes every year, although I fully believe that you do not have to wait until January 1 to start anew.  I don’t want to make resolutions, but goals that I hope to achieve in the new year.  Here are my goals for 2019:

  • Continue on my weight loss journey.  I’d love to lose these last 50 pounds, but I’ll chose progress over perfection.  Eating clean and consistent exercise are the goal.
  • Be more Present!!  I have to admit, I’m addicted to my phone and facebook.  When did family events and dinners become everyone staring at their phones??  I’m horrible about this, so I’m definitely working towards changing this.
  • Pay off credit card debt.  We are pretty good with paying off our debt, but we made a few pretty large purchases in 2018 that I want to pay off.  I have updated our weekly budget and should have it paid off by July.
  • Meal Plan!!!  We’ve gotten into such a horrible habit of not planning anything and then being too tired to cook.  So we eat out.  Which is not only bad for the wallet, but also our waistlines.
  • Self Care.  I need to be better about taking time for me.  Time to read, paint my nails, put on a face mask, whatever!
  • Grow my business(es)!!  I have really enjoyed adding on to Morning Glory this year.  I had many special orders for the holiday season.  I want to continue in this venture and learn ways to create without it taking over my life.  I’m also hoping to grow in my Arbonne business.  I truly believe in the products and love how I feel when I’m consistent.

November, already??

This year has seriously flown by!  I can’t believe we’re already approaching the holiday season.  Today I want to talk about Thanksgiving!  My normal tradition was with my entire family at my mom’s house.  She and I would prepare the entire meal, including desserts, and her sisters and their families would join us.  We usually have at least 15-22 people for the holiday!  Since Aaron and I married, last year we started a new tradition.  We go to BOTH families for the day.  Last year we went to his families for dinner (with 30+ of his family members!) and then back to my mom’s for dessert.  Since we live next door to my mom, we got to enjoy plenty of leftovers the week after.

So, what do we serve?

At my mom’s we have roasted turkey (or 2), stuffing, mashed potatoes, sweet potato casserole, green bean casserole, corn, coleslaw, Hawaiian rolls and deviled eggs.  For dessert…omg…pumpkin, apple, coconut cream pies and usually a cheesecake and cookies.  It’s insanity and I love it!!!

At Aaron’s family, we have turkey, corn casserole, regular and gluten free stuffing, mashed potatoes and some other veggie dishes.

Both homes have amazingly delicious foods and I cannot wait!!  I’m pretty good about not overindulging, since we have leftovers for days.  I will allow myself a piece of coconut and pumpkin pie though, as my mom makes both in a sugar free version for me, since I can’t have sugar.

To me, it’s more about WHO is around the table, and not what’s on it.  I love seeing my aunts and cousins.  I’ve actually had asthma attacks from laughing so hard.  How does that even happen!?  I’m also loving getting to know Aaron’s cousins and family.  His cousins are really awesome and I’m so happy to have them in my life.  Our holidays may be different, but they are even better.  Not only do I have this amazing man by my side, but also his amazing family.  I’m so truly blessed.

What’s on your weekly menu?

Busy weeks are always the hardest to plan dinners for.  We have a basketball game tonight (Go Sixers!) and then are in Philly during the day tomorrow for a doctor visit.  A funeral Wednesday and Friday I’ll be getting ready for my first open house for my jewelry and design business!  We planned a little last night and I roasted a whole chicken to eat for lunches, and a triple batch of chocolate protein muffins for breakfast.  Our menu this week looks like this:

Monday: Chicken, brown rice and roasted carrots (Poor Aaron has to eat in the car on the way to the game).

Tuesday: Chicken Rice bowls.  Make your own style with sweet potatoes, sauteed onions, roasted corn and broccoli to choose from.  Dress with olive oil and lime juice.

Wednesday: Steak, grilled potatoes and roasted veggies.

Thursday: Shrimp tacos on brown rice tortillas

Friday: Either something in the crockpot or take out.

Saturday: Black bean, turkey and sweet potato chili
